Known as “true cinnamon” these delicate quills are milder and more floral than Cassia varieties found in supermarkets. Ceylon quills are soft enough to be ground in a peppermill, mortar & pestle, or coffee grinder.

Use whole quills to mull wine or cider; add to coffee, tea, or hot chocolate; or to infuse warmth into curries, biryani, or Mexican dishes. Grind quills to a fine powder and add to fruit dishes, baked goods like breads or cakes, or to add a warm note to spice blends.
