Brown cardamom is a pungent and smoky compliment to many Indian dishes like tandoori, curries, and marinades for roast meats. It can also be an essential ingredient in Asian clear soups, broths or stocks. While distinctly different than the green pods, brown cardamom is just as versatile and can be combined with warm spices like allspice, cinnamon, ginger, and star anise.
